Philosophical-anthropological Perspectives on the Culture of Food in the City of Horsens, with Special Regard to Diminished Consumption of Meat Products
Project description
I am a Ph.D. student at the Institute of Culture and Society, Aarhus University, with Associate professor Steen Brock as my supervisor. My academic background is in philosophy and anthropology, and I have a practical background as a regular cook, a vegetarian cook and a kitchen leader. My approach is a philosophical anthropological study, researching aspects of Danish meat-consumption, and primarily looking at stories, simply put, of “this is what we eat and why” with which Danes typically grow up, and which become their norms and part of their identity. My research includes strategies intended to positively affect the meat-eating norms of various groups – in particular families with small children; strategies, which I will implement in Horsens, Denmark, in cooperation with The Horsens Healthy Cities Program.
I have arrived at five main themes, designed to cover certain facets of the project issues:
- Meat as an Experience Economic Phenomena, and Umami-Rich Nordic Foods as a Substitute
- Mixed Method Studies of Nitrogen Footprint Management in the Danish Diet
- Paleo Diet, New Nordic Diet, and Masculine Self-Identity in Relation to Meat
- Meat Portioning, Obesity, and Diet in Institutional Lunches for Small Children
- From Farms to Household Trash; Life Cycle Management of Meat Products
